    Leftover Chinese Roasted Chicken

Just thought I share with all of you a simple but delicious way to turn left over chicken rice roasted chicken into a new dish. Provided you have stored the sauces that go with the chicken separately.

-Slice a medium sized onion into rings
-Finely slice a couple of red chillies (optional)
-Heat wok with a little oil and saute onions and chillies until fragrant
-Add left over roasted chicken to wok, saute until chicken evenly coated with chillies and onions
    - Pour in leftover light soy sauce to taste
    - Lower flame and add the thick sticky sauce the chicken is normally served with.
    - Add a little water and leave it to braise for a few minutes, sprinkling a little sugar if necessary
    - Remove from fire when sauce is thickened and chicken succulent

This is a quick and easy dish to add variety to the meal especially when you are in a hurry. Serve with hot steaming rice and roasted pork with garlic, chilli sauce...YUMMY!
