Here is another one of sayu manis fried with garlic. You notice, there is hardly any leaves.

I only use the leaves to cook. Saute sliced onions, mustard seeds and dried chillie pieces with some dried anchovies or dried prawns. Throw in the sayur manis when anchovies are crisp and stir fry. If you like, you can also add in grated coconut.
Is this vegetable crunchy like? I might have been mistaken but I thought that the Sabah Shi Chai Choi used to be served cooked in sambal belachan in most restaurants of the late 90s.
