1 garlic clove
1cm/ half in root ginger
4tbsp light soya sauce
2tbsp lime juice
450/1lb beef fillet
1 green pepper, red , yellow pepper as u like
2 celery sticks
4 spring onions
1tbsp vege oil
2tsp sesame oil
Peel the garlic and ginger. Crush the garlic and grate the ginger finely.
Put the garlic and ginger in a shallow dish with the soy sauce, lime juice and balck pepper.
Add the beef to the marinade mixture and stir well. Cover with cling film and leave to marinade for 30 minutes in the fridge.
Remove the beef. Reserve the marinade.
Cut the fillet across the grain into even strips. Wash and halve the peppers. De- seed and slice. Trim and slice the celery and spring onions.
Heat the veg oil in a pan. Add the beef fry for 3-4 minutes or until browned. Remove beef aside.
Add the peppers celery and onions to the pan. Fry for 4 minutes or until tender.
Return the beef and the marinade to the pan. Boil for 2 minutes Sprinkle over the sesame oil and cook for a further minute. SERVE
