Crumb Topped Pork Chops
4 lean pork loin chops
50g(2oz) white bread crumbs
5ml(tsp)chopped fresh mint
pinch of dried thyme
finely grated rind of 1 lemon
one and half teaspoon of coriander seeds crushed
1 egg , beaten
salt and black pepper.
cut the rind off the chops and put them on the baking tray.
mix the remaining ingredients together with seasoning to taste. Spread the mixture evenly over the chops using a knife.
bake in the oven at 200c(400f) for about 45- 50 minutes, or until golden. Serve hot, warmed dish.
