    Chinese fried rice

    Can anybody tell me how to cook good chinese fried rice ? Something like yong chow fried rice which is fragrant ?

    to make good fried rice, is to make sure that the rice is not hot...best rice to use is an overnight rice that been out into the fridge...right amount of egg and soya sauce....dun ever put dark soya sauce..it will spoil the taste of the rice...

    one friend told me that to make good tasting fried rice, don't ever use water to wet the rice while frying, use chinese cooking wine.....try it.

    Fried rice with long bean and luncheon meat..yummy yummy yummy...cut the luncheon meat in small cube.....yummy yummy yummy!

    emmm, correct me if i'm wrong...
    but the purpose of cooking the fried rice from the overnight rice kept in the fridge is so that the rice would be dry or else, after frying, it would be sticky as a result. no?
    and to add water or chinese cooking wine?
    err, wouldn't that be stickier?
    and... extremely soft?! LOL
    learnt that from experience, anyway, hmmm.
    gosh, never like the long beans in my nasi goreng.

    i agree with the overnight rice in the fridge.... i don agree with the dark soya sauce. It depends on the recipe of the fried rice... my mum cooks with the dark soya sauce.... mmm... yummy. Garlic, minced pork meat, prawns, long beans, carrot, lap cheong/luncheon meat, rice, eggs, a pinch of salt, soya sauce n dark soya sauce.... oh and fry till you see some of your rice jumping in the wok. Then it's nice and fragrant.

    lmei..everyone have their own style right...some like it dark....do u know tht yong chow fried rice dont put dark soya sauce..

    i can share the way i cook with you...just pm me....maybe u can try my style..

    my godma likez 2 add lapcheong (chinese sausage) n salted fish in d fried rice... kinda nice.... even tho i'm not a huge fan of salted fish, but it tastes gud with d fried rice.... hehe....
