Don't know which one but long time ago, my mom use to make agar-agar and dry it in the sun. It becomes a hard jelly which is pretty nice to eat, crunchy.

My mother makes the type of jelly Firefly mentions every CNY. We call it egg shell jelly because she puts in eggshells when the jelly is being cooked. I believe it takes out the impurities...?...or something like that.
Its a must every year. She will start making about 4-3 weeks before CNY and the jelly will be sunned everyday for 2 weeks.

Yes, yes!! That's the one!! I know this jelly needs to be dried up..Do any of you have the specific recipe??

I saw it being sold at a few stalls in S.parade..a small little container cost around $20.

Yup, expensive, isn't it! My daughter loves this so, I thought I'd make it myself instead of buying it and besides, I only see it being sold during the hari raya time...Hope your mum will share the recipe:D Thanxs

We used to make this dry jelly when I was a kid. I have almost forgotten about it.

There's no special recipe. We use Agar-agar - make it like normal. Then we sun-dry it for a few days (yes, a few days). The agar-agar will dry up, the sugar will crystallise and the whole thing will shrink (important to remember this so you need to make more as you will end up with less).

Don't use jelly (as in jelly crystals or jello). Jelly will melt.

I think I will make some soon - my kids have never seen this before.

Hi sorry for the late response. My mothr did not give any measurements, so you pandai-pandai agak-agak for yourself.

As ginaphan says, use agar-agar and make as normal. It is preferable to use rock sugar. 2-4 lightly crushed eggshells (2-4 shells, depending how much you're making). It is important to stir the agar-agar often and regularly, if not it will burn at the bottom. The egg shells will draw out the impurities and it looks like foam at the top. You must scoop out the foam every once in a while. Take out the eggshell when done. When you pour into your mould, pour it through a strainer, in case there's any eggshell. Let it set first before you put out into the sun. When sunning, she usually wraps it with kitchen paper, in case bugs or ants get to it. Do it for 2 weeks. Minimum 1 week if there is strong sun.

According to my mother the cooking process takes a LONG time, from morning to afternoon - around 5-6 hours.

Let me know how yours turns out!

Hi IN, thanxs for the recipe...I'll go buy the stuff and try to make it!!I guess it will have to be all trial and error!! I've never been able to do a decent agar-agar..always either too soft or too hard!!! :o I'll let you know if it turns out well!!
Wow, the drying process takes a long time, huh! No wonder it is being sold slightly expensive for just plain ol' agar-agar!!
Erm,ginaphan, please do note down the quantities for me when you have the time to make it, ya!! Thanxs!!
