I love italian dishes and I have been on a quest to search for the best and easiest carbona sauce to prepare. After trying out many, many recipes, I have finally found the right one!!!
Carbonara sauce
3 egg yolks (You can freeze up the egg whites to use it in other dishes)
1/2 cup heavy cream
3 shallots thinly sliced
2-3 cloves garlic, minced
bacon cut into squares ( the amount is up to you)
1/2 cup parmeson or romano cheese
1. Mix egg yolks with cream. Set aside.
2. Saute bacon and garlic. Cook over low heat till bacon is crisp. It is important to cook the bacon very slowly over low heat.
3. While waiting for the bacon to be done, start cooking your spaghetti.
4. When bacon is done, add in the shallots and saute for half a minute or so.
5. Drain pasta and place in a large pot.
6. Add bacon mix and toss once.
7. Add egg and cream mixture and cheese and toss again.
Note:Last 3 steps must be done quickly, to ensure egg is properly cooked.
8. Season with salt and pepper as desired and serve.
The amount of pasta depends on on. The amount of this sauce is for about 2 1/2 servings of pasta. Add in more cream and cheese if you are cooking for more.
