Hi, I know for all those "seasoned" chefs out there, you might find this the dumbest request ever, but how do you fry the yellow mee? I have done all types of dishes but I can never fry a decent mee. I especially love the simple ones that you normally can get from the coffee shop (parkway At ss18/19,) in the morning that cost around $1.00 per plate without the side dishes...Everyone keeps saying so easy to do, but I can never get the right taste. Does it have to do with the brand of black soya sauce???
And the other dish is Singapore style mee hoon...anyone knows the recipe?? Thanxs a lot!!

It's not a dumb question. In fact, it's a trade secret.

The dark sauce is all doctored. All the stall recook the sauce befor using it. What is normally done is thinned down with water and added is sugar and ajinomoto. That's why the enhanced flavour.

ok, thanx for the info........so, just add the sauce with water, sugar and ajinomoto?? Um, do you have the Specific recipe? Or any style lah...Thanxs a bunch... :D

It actually varies from stall to stall. Some add other ingredients such as ginger, some spices like fennel, cumin, cloves and so on. This will depend on what you are frying and what's your own preference.
