Have done this a few times and it's really nice....
Chocolate Volcano
250g of cooking chocolate
250g of butter
150g of fine sugar (can be reduced)
4 heap tablespoons of Flour (shifted)
5 whole eggs (lightly beaten)
5 egg yolks
12 X 2" round baking cups
extra butter for buttering the cups and lightly coat with flour.
Method:
Melt chocolate and butter. Mix with sugar Mix well. Then stir in shifted flour, mix well. Leave to cool before adding in the eggs.
Pour into the 2" molds. Divide equally. Makes 12 cup cakes.
Chill for at least ½ hr. (overnight also can). Pre heat oven to 200deg C.
Bake in the oven for 10 min or until cake rise about ½ inch. Remove and serve (with ice cream)
Please note that over baking will produce a cupcake with out the lava. The center is suppose to be soft molten chocolate.
