So glad that I was able to cook up a 3 dish meal in about 30 mins today. They are simple and yet my family enjoyed this evening's dinner very much. It motivated me to share my recipes with all of you. For those of us who are busy at work and have to dash home at the end of the day, I hope this tips may offer some help.
Dish 1: Carrot pickle
Ingredients: Carrot, shallots, cili padi, salt, sugar & vinegar
I used a grater to cut the carrot into strips. This is much faster than cutting with knife. Slice shallots.
Add salt to carrot strips & shallots. Mix them with your hand. Leave it for 2 mins. Squeeze all the juice out. If the carrot is too salty, rinse it with water and squeeze or filter the water dry. By adding the salt, and squeezing the water out, this will give a crunchy carrot. The same method could be used for radish, sengkuang or cucumber pickle.
Add cili padi to carrot and shallots. Add sugar and vinegar. If you prefer your pickle to be more sour, add more vinegar.
Keep this in the fridge until dinner time. Serve cold.
Dish 2 - Crispy Fried Chicken
Bought Ayamas Crispy Fried Chicken in frozen pack.
Deep fry.
This is delicious - flavourful, smells like KFC and very crispy.
My family loves it!
Dish 3 - Gulai Assam Lady Fingers
Ingredients: Lady fingers, Grissom Nyonya Assam Paste (comes in jar), Assam Jawa, Bunga kantan, tomatoes
Slice lady fingers diagonally.
Put them into microwave with a small cup of water. Steam for about 1 min.
Heat up wok. Put 3 tbsp of Grissom Nyonya Assam Paste. Fry them till fragrant. Add a bowl of assam jawa juice. Let it boil, then add tomatoes. Leave it to cook for a minute, add sliced bunga kantan.
Pour the sauce over the steamed bunga kantan and serve.
