Vixey's Brinjal & Potatoes

- Dice 3 potatoes, season with salt & pepper and ready-made roasted garlic flakes
- Fry in little oil, till golden brown
- Add diced brinjals (preseasoned with salt & pepper)
- Fry till brinjals almost cooked
- Add one diced onion
- Add 2 heaped tsps of tau cheong smooth paste
- Fry and cover pan for 1-2 minutes on low heat
- Stir fry, turn off heat and sprinkle sliced chilli & spring onion
- Serve topped with fried shallots

All amounts agak-agak....

Never seen or tasted this combination of potatoes/brinjals. Is this your own invention? Must go to market tomorrow to get brinjals to test this recipe. Will let us know the result later.

Here is what I do with mine...

1 long brinjal
2 tablespoon of balachan
1 hand full of dried shrimps
chili boh or chili powder
oil

Soak the Dried strimp till soft. remove sand or other impurities. Pound the shrimps and mix with chili.

Cut brinjal into small pieces. Heat oil in a pan till very hot. Deep fry till soft. remove and drain evcessive oil.

Next A small quantity of oil, stir fry the balachan, shrimp and chili till aromatic. then add in the brinjal mix well. Serve HOT.

one more...

Boil brinjal in water till soft. Remove skin but take care not to mess up the whole thing.

Arrange in a long plate.

Fry thinly cut shallot/ small onion in oil. When the shallot turn brown, pour over the arranged brinjal. served with good chili sauce. (Lingam)

Stir Fry Brinjal with Minced Chicken in Claypot - recipe by Amy Beh

This is heavenly - esp so for one who loves salted fish!!

Ingredients:

350g brinjal
75g minced chicken (get the frozen Ayamas one, to save time)
40g salted fish, diced, soaked and deep fried till crispy (I used Kurau)
1 tsp chopped garlic,
1 tsp chopped ginger
1 tsp hot bean paste (I used taucheo and add some cili boh to it)
1-2 tsp oil
A dash of Shao Hsing Hua Tiau cooking wine (optional) - (but certainly taste better with wine added)

Sauce Ingredients:

1 tsp light soya sauce (or can skip if too much taucheo is used)
1 1/2 tbsp oyster sauce
1/4 tsp thick soya sauce
1/4 tsp pepper
1/2 tsp sugar or to tast
1/2 tsp sesame oil
100 ml chicken stock (or add a tsp of Knorr chicken seaoning powder to 100ml of water)

Garnishing:
Some coriander leaves and red chilli slices

Method:

Cut brinjal into slices of long (5 x 1.5cm) pieces.
Soak in salted water. Drain well and pat dry with kitchen paper towels.

Heat wok with enough oil. Stir fry brinjal over high heat for 20-30 seconds.

Heat oil and sesame oil in clay pot. Saute ginger, garlic and hot bean paste until fragrant. Add in chicken and pre-fried salted fish. Fry for 1-2 mins.

Return brinjal and sauce ingredient to the clay pot.

Bring to a boil, then lower heat and simmer until gravy is slightly thick.

Add a dash of cooking wine before dishing out. Serve with garnishing.
