Has anyone tried making kimchi?

If yes, would you be kind enough to share your kimchi recipe with me here?
I have tried making kimchi but didn't turn out well.
Would appreciate some tips for delicious kimchi or even some Korean dishes and where in Subang can we get Korean ingredients for Korean dishes.

Got this off the internet.. you try and tell me...:D

4 lb. Korean cabbage
3 c. water
1 c. salt (for softening
cabbage)
1/2 c. medium radish, slice
1/8-inch thick and
1 1/2-inches long
1/2 carrot, cut same as radish
3 Tbsp. chopped green onion
1 Tbsp. chopped garlic
1 Tbsp. chopped ginger root
(fresh)
2 Tbsp. red pepper powder

Remove outside leaves of cabbage and cut off head. Cut into 4 sections lengthwise. Put sectioned cabbage into a large pan; sprinkle with salt water (1 cup salt to 3 cups water). Let stand an hour until cabbage softens. Mix radish, carrot, green onion, garlic, ginger and red pepper and set aside. When
cabbage has softened, drain off water, but do not pat dry.

Pack mixture of vegetables between each of the cabbage leaves.

Wrap up cabbage with outside leaves. Pour juice from cabbage and vegetable mixture to fill a jar in which the stuffed cabbage has been placed. Cover jar tightly and let stand to ripen for 2 to 3 days at room temperature. Then keep refrigerated

The last time I made kimchi, it took me 14 days to ferment the cabbage before I get to taste it! The waiting was really painful!! Every other day I would open the jar up to check the status of the pak choy cabbage.

Since your recipe, Firefly, only takes 2-3 days, will try it out and see how it turned out!! Then I can try to boil my Kimchi Stew........yum, yum :p

Just can't wait!!

I have seen my friend made her kimchi. She never add water to the salt. And she added a korean pear to increase the sweetness and favour.

You put put the whole pear in? Or slice them?

What is Korean pear, btw? Is it the extremely big, round and juicy ones?

Have been busy lately Firefly. Haven't tried the recipe.
If it turned out well, will annouce to all! I LOVE kimchi!!!
