To kickstart the recipe collection, here's my favourite Moist Chocolate Cake.
Hope someone will try it out and let me know how you enjoyed it.

8 oz butter
6-7 oz castor sugar
3 large eggs
milk
1 teaspoon vanilla essence

Sift together the following:
a pinch of salt
7 oz flour
3 oz cocoa
2 level teaspoons baking powder

Method:

1. Cream butter and sugar till light.

2. Add beaten eggs gradually, beating well after each addition.

3. Fold in the sifted ingredients. Add vanilla and some milk to give a soft consistency.

4. Place in a greased lined tin and bake in a moderate oven for 1 hour.

5. When cool dredge the top with icing sugar.

NOTE:
=====

1. If a richer cake is preferred, place the mixture in two sandwich tins to bake.

2. Sandwich together with chocolate cream.

3. Prepare the cream as follows:

1 oz butter
2 oz icing sugar (sifted)
melted chocolate

Cream butter and sugar till soft.
Add melted chocolate and cream for a minute.
Use as required.

Hope you will like this cake! :p

Hi Sukhi,
I have tried this recipe but it turned out to be hard. I think I didn't add enough milk as you just mentioned add "some" milk. You have replied to one of the reader as half a cup, can you please specify the quantity in "ml".
Many thanks. :p

Hi Evelyn,

Usually I would buy the small carton of UHT milk, same size as Milo (which a child can bring to school). I will use up 2/3 of the milk for this cake.

If less milk is used, the cake would not turn hard. It'll just be dry and crumbly.

I used about 150ml of UHT/Fresh milk for this recipe.
