heya! anyone with some good local brinjal recipe~?

Throw that whole brinjal skin n all into boiling water till it is soft. Take it out , add some oil n soya souse to taste. That's the natural taste you'll get.....

My style is similar to yours. I steam the brinjals whole first, then peel the skin off. Add some oil and oyster sauce for taste.

The main thing is to soften the brinjal by boiling or steaming lock stock n barrel with the nutrient sealed by the skin inside.
I love the tinge that the skin gives n of course some may taste differently. Alternatively can add fried shallot n garlic oil to enhance the oooommpphh.

try this..slice brinjals into 1/4in rounds..lightly score it ( lightly cut into the white flesh into diamond shape)..rub salt and black pepper( slightly coarse) on both sides. pan fry in a little oil till cook. that's it.

i do mine slightly different...

Cut the brinjals like coleslaw mentions.

Heat oil for deep frying. when oil starts to vapour, pour all the brinjals in. Fry until soft, then remove and drain excessive oil and set aside.

Next heat a small amount of oil, garlic and stir fry garlic till aroma is out then add belachan. Add chili boh (ground chili) and small dry shrimps. Fry till nice aroma add the beep fried brinjals back in mix well and then serve hot.

using yr recipe,omit just the blachan..add assam water and a bit of sugar. some sliced big onions can also be added.
only problem with cooking brinjals this way is, you don't see the volume. 10 brinjals will cook down to a small plate!

*cry* sounds like my mom's cooking!!!!!!! miss it so much.

btw, brinjal is not to be taken if u got injuries (e.g. open wounds / after operations)... just in case u guys dunno this.
