View Full Version : How to bake cake with even top?

Hi! I have trouble with baking cake that everytime when the cake hit my oven, the middle section of the cake will rise higher than the side and it cracks in between. What should I do so the top part of the cake will rise evenly?

can be one of this:
1. oven too hot
2. not enough liquid
3. overworking the batter.
try the next time, after pouring cake mix into tin, push the batter to the side so to create a little valley/ hole in the middle. then bake. if u are icing it, just slice the dome off, not a problem.

Coleslaw basically got it covered. Too hot an oven can cause the cake to rise rapidly in the middle. Also lighter cakes tend to rise a bit higher in the middle anyway, unlike very dense cakes. After pouring batter into the pan, move it about to even the batter and give it a bang on the counter befre placing it into the oven to bake.
I think it is rather fun to cut off the higher parts and sample the flavor. hehehe..

for sponge cake,add ovalette (stabiliser)

It may be just the recipe. My chocolate cake always cracks at top centre.
