Does anyone has their muffin recipe?? I've tried several that I searched in the Internet, but thus far, didn't turn out just as well.. It's not that I'm not good at baking, though... :p Hve tried several Amy Beh's recipe in Kuali Section (The Star) and so far results have been perfect ! :)

Hi, I found this Kenny Roger's corn muffin recipe by Todd Wilbur Secret recipes. What he does is go around famous eateries and tries their famous dishes and clones their recipe. He apparently has been on the Oprah show....Anyway, I have tried making a "cloned" recipe of his cinnamon buns from "Cinnabon" and they actually turned out exactly the same right to the cream cheese topping!! Here is Kenny Roger's corn muffins. I have not made them yet. Do try this and let me know if it taste the same.

1/2 Cup butter
2/3 cup sugar
1/2 cup milk
1/4 cup Honey
2 Eggs
1 tsp salt
1 1/2 cups all purpose flour
3/4 cup cornmeal
1/2 tsp baking powder
3/4 cup frozen sweet corn

Preheat oven to 400 F.
Mix butter, sugar, honey, eggs and salt into a large bowl.
Add flour, cornmeal and baking powder. Mix thoroughly.
Add milk while mixing
Add corn to mixture
Fill muffin pan 2/3 full with mixture
Bake for 20 - 25 minutes or until muffins are light brown.

for muffins, do not mix thoroughly. the mix should be lumpy. wet into dry ingredients and 3-4 quick sitr should do. not all the flour need to be incorporated. hope it make sense to you.

Tried the muffin this afternoon. It turned out like scones! When I thought what had gone wrong, I suddenly remember I missed the milk... :p how silly!

Otherwise, they taste OK. Will try again someday, when I can get hold of the cornmeal... only available at selective shops selling organic stuff... anyone knows where in SJ/USJ can I buy them??

Someone gave me a box of those premixed cake flour, the one that u only have to add in eggs and water.The problem is I dont have a conventional oven, does anyone know if I can use my microwave oven to bake it instead.

unless the recipe is specially meant for use in microwave oven, you can't bake in a microwave. the cake won't brown and texture also different..

U can get cornmeal from shops that sells all baking items. There are two shops in Taipan business center, one in ss14.

You can bake a cake using a microwave oven but bear in mind that the cake would not look the same as being baked in a conventional or convection oven.. Do a google search and there are instructions on how you can bake using a microwave oven. Here are a few sites:-

Couldn't locate the shops in Taipan. Have you got the names of shop & addresses? I havee tried the ones in USJ8, SS19, Bake with Yen in Tmn Megah Kelana Jaya as well as the organic shop in USJ9. Neither carry this item.

Bought cornmeal from a shop situated the same row as Bake with Yen in Kelana Jaya. And tried immediately bake the muffins. And I made sure I had the milk next to the flour ... :D

The muffins turned out better than the last time. But not EXACTLY like Kenny Roger's (was told theirs were imported directly from US. And they have stopped doing that > 5years ago) as it's not viable. I think adding vanilla essence may do the trick :cool: Will try that next time.

Anyhow my kids (and my neighbour's, too) love them :)

Hi, the last time I bought cornmeal was from a baker's shop at taipan business center. I think the shop was called Baker's Cottage..or something to that effect...I know it's cottage something....
But anyway, I'm glad you've managed to get the cornmeal. I'll try to get the cornmeal from the shop in taipan biz. center...and try to make these muffins... I miss those muffins...it's a shame they dont sell it here anymore!!
