maybe you can roast a stuffed chicken instead of a turkey, serve with a toss salad, either some cornbread or mash potatoes or roast potatoes and some desert.
or you can go to http://www.cooks.com/ for some ideas

Was watching Jamie Oliver the other day and he prepared individual stuffed spring chicken and served it with a gratin and salad. With trifle for dessert.
For stuffing he lightly sauteed potatoes, carrots and some herbs (some other stuff i forgot but can customize) stuffed the bird with it. Baked it with pieces of ham around the chicken.
For the gratin, he used Jerusalem artichokes but I think you can substitute with veg of your choice. Basically is covering the veg with some cream, sprinkle herbs and seasoning and generous helping of shredded parmesan and bake.
Just google for Jamie Oliver or Nigella Lawson and am sure you can find a recipe or two that suits your taste buds.
Why not try something different this Christmas like steam boat? You can buy the green noodles and yong tau foo etc from the market.
Everyone put in what they like. :)
Whatever you are having, have a great Christmas and wonderful New Year!!

If you'd like easy recipe, you can view this website: http://www.unilever.com.my/ourbrands/cookingandeating/recipes/
and check out the roast chicken recipe there. It only requires 6 ingredients (including the chicken itself)....knorr chicken powder and olive oil to marinate. pretty simple and straightforward.
some Xmas related nice dishes to make would be :
Oven-crisp herbed lamb chops, Roast chicken with spicy sweet potato and seafood salad...

These are the stuff I have contributed to the table in Christmas past (other than the store bought roast turkey):
1. Greek spaghetti
2. Chicken Pies
3. Baked Chicken in Beer Casserole (http://www.usj.com.my/bulletin/upload/showthread.php?t=9847&highlight=beer) - that year I did the slow cooker version
4. Vegetarian spaghetti
5. Roast Chickens - different versions
6. Seafood pastas
Unfortunately, other than the casserole, I don't have the recipes with me right now.
