Almond Crisps

This is one of my favourite cookies.. ;)

Ingredients:
4 Egg White
180g Castor Sugar
1/2 tsp Vanilla Essence
100g Plain Flour
200g Almond Flakes
50g Melted Butter

Method:
1) Mix egg whites and sugar, stir till sugar dissolves.
2) Add flour and mix well.
3) Add almond flakes and butter, mix well.
4) Spoon onto a baking tray lined with well greased aluminium foil and spread out into thin layer using a spoon.
5) Bake at 180c for about 20 minutes till golden brown.
6) Remove and leave to cool before storing into an air-tight tin.

Note:
When spreading the mixture into thin layer, it should be even and very very thin so that the cookies will be very crispy.
You can also use pumpkin seeds to replace almond flakes.
