Here is another recipie ...
12oz minced meat
1.5 cup bread crumbs
1 big onion chopped
3 eggs hard boiled
1 egg lightly beaten
lots of Tomato catcap
1 tablespoon woshester sauce (spelling??)
crabmeat sticks (optional)
1/4 can sliced button mushroom(optional)
A dash of Ground Origano
Salt and pepper to taste
Thinly sliced meat. can be chicken ham or bacon or cooked ham
Milk
Minced potato
Bake at 175 C for 45 minutes each time.

First mixed al the incredients without the mash potato and sliced meat.

Mix everyting before adding the bread crumbs

Here everything is mixed Do not use too much beaten egg if the mixture is too wet. The final mixture should look lke this..

Here is what to do with the sliced meat.
Butter one loaf tin and lined with sliced meat. Here I used Bacon. You can use anu other meat.

Put a thin layer of the mash meat to the bottom of the loaf tin and arrange in the eggs.

It's time to Oven the loaf..

Here you see the loaf is ready. You can see that the meat have left the side of the tin means it's ready.

Before taking it out, drain the excess water.

This meat section can be made 1 to 2 days ahead but make sure you wrap it properly before you put it in the fridge. DO NOT FREEZE!!!!

Next mash the potato. Milk is added to soften the potato. Firefly added a small carrot for the color. :D

Coat the meat with a layer of the mash potato. The thickness will depend on you. Another thing.. test the meat for flavour. If the meat is not salty, salt can be added to the mash potato.

Once done, it's ready for baking. Brush on a layer of butter before baking.
175 deg for 45 minutes or until gloden brown

Can we add butter to the potato mash instead of milk?
BTW, how many meatloafs did you make lah....... looks like 4 loafs!!!

Firefly made 4..but 1 kilo minced and 1.5 kilo potato and 1 large loaf of bread.
Not too much butter as it becomes too oily. Milk makes a smoother paste.
Just to double check......is the recipe you gave above for 1 loaf or 4 loafs?

aisay flirefly, you champion lah. the meatloaf was great :)
but i think i overdid the mash potato layer. put too much, the end result was HUGE! :eek:
but the taste was awesome. should have taken some photos and post it here. forgot lah. too excited want to eat it :p

Thank you...:D... Try to change it with different fillings..like fishballs, real crab meat or even shrimps.
The thickness of the potato layer would depend on personnel preferance. if the meat is too salty, then a thicker potato layer would help offset it. If the meat is too flat, (in taste) then a little bit more salt can be added to the potato layer.
