View Full Version : Chicken Potato Croquettes

1 Kg Potato
200 ~ 300 grams minced chicken
1 tablespoon thyme
1/4 cup parsley (finely chopped)
1 large Onion (finely chopped)
16 pieces of cheese cube (1/2 inch cube)
1 cup flour
1 egg (lightly beaten)
1 cup breadcrumbs
salt and pepper to taste

Method..


Mix Thyme and salt with minced chicken. Leave to marinate for 1/2 hour. Stir fry minced chicken in oil.


Skin and boil potato till soft. Mash. Mix in cooked chicken, parsley and onion.
Mix well.

Divide into 16 portions, wrap each portion around the cheese (lightly flour you hands to prevent sticking to your hands). Then dip into egg remove and roll in the breadcrumbs.

Heat oil till hot. cook the croquettes till golden brown. remove and serve. Make sure the oil is hot as low a heat will soften the cheese and it will flow out of the Croquettes

Note..Minced chicken can be cooked 1 day ahead and can be replaced with canned salmon, tuna and etc.

if substitute wit canned tuna, stil nid 2 use d herb thyme onot? if nt, any othr suitable herbz? ;)

It's not necessary but Herbs are to enhance the taste, so it's up to you.

A variation of what you can also do with the croquettes:-

Prepare hotdog or burger buns, split them open, set aside.
Prepare shredded cabbage or lettuce., set that aside too.

Make the croquettes according to the shape of bun, long for hotdog or round for burger, then fry as suggested by Firefly.

Place some shredded cabbage or lettuce in the bun, squirt a bit of mayo on that, place the croquette on the nest of veggies, the top with bbq sauce or tonkatsu sauce.
Voila!! You now hv a japanese all-time favourite. Add diced tomato too if you want.
Carb, protein, and veggies, all in a handful. Kids love them!

haha.. I meant that even kids love it.. Croquettes are popular in Japan. The same way japanese curry buns are so popular.

hmm... thyme goez wit chicken but mayb nt wit fish tho.... so if i try makin it wit tuna, tn havta figure out wat herbz goez wit it.... :confused:

Why not? All this are not asian cooking anyway. :D

Firefly tried spanish's Squid cooked in it's own Ink. :D

i tried squidi wit itz ink cooked wit buckwheat pasta.... a recipe fr a gourmet chef fren last time.... sounded strange 2 me at 1st but wn i tried it, veri veri nice la... slurp!! ;)
