View Full Version : Mexican beef tacos

30ml(2tbsp)vegetable oil
1 onion , skinned and finely chopped
1-2 garlic cloves, skinned and crushed
5-10ml(1-2tsp)chili powder, according to taste
350g(12oz) lean minced beef
225g(8oz) can tomatoes
15ml(1tbsp) tomato puree
2.5ml(one and a half tsp sugar)
salt and black pepper
283g(10oz) can red kidney beans drainned and rinsed
8 taco shells
shredded lettuce and grated parmesan cheese, to serve.

METHOD
Heat oil in a pan, add the onions, garlic and chilie powder and fry gently until soft. Add the minced beef and fry until browned, stirring and pressing with a wooden spoon to remove any lumps.
Stir in the tomatoes with their juice and the tomato puree. Crush the tomatoes well with the spoon, then bring to the boil, stirring. Lower the heat, add the sugar and seasoning to taste, then simmer, uncovered , for 20 mins util thick and reduced. Stir occasionally during this time to combine the ingredients and prevent them from sticking.
Add the kidney beans to the pan and heat through for 5 mins. Meanwhile, heat the taco shells in oven.
To serve, divide the meat mixture equaly btween the taco shells, then top with lettuce and parmesan.

anyone could give a tried and tested recipe.... my daughter loves this cake but its really expensive to get one.
