4 chicken portions
1 small onions, skinned and finely chopped
salt and black pepper
50g(2oz)bread crumbs
15ml(tbsp)chopped parsley
50g(2oz)butter or margarine, melted
METHOD
wipe the chicken and season well with salt and black pepper.
Mix the crumbs with the onion and herbs.
Brush the chicken joints all over with butter or margarine, toss them in the breadcrumbs and place in buttered ovenproof dish.
Bake in the oven at 190C(375F) for about 1 hour or until golden.
