75g(3oz)plain flour
175g(6oz)brown sugar
25g(1oz)cocoa powder
1.25ml(1/4tsp)salt
100g(4oz)butter or margarine
2 eggs beaten
5ml(1tsp)vanilla flavouring
75g(3oz)chopped mixed nuts
METHOD
put all the ingredients in a bowl and beat throughly until evenly combined.
Turn the mixture into a greased 20.5cm(8inch)square cake tin and level the surface with a palette knife.
bake in the oven at 180c(350f)for 25 minutes until only just set(the mixture should still wobble slightly in the centre). Stand the cake tin on a wire rack and leave the cake until the cake is completely cold. Cut into 16 squares and put in an airtight tin.
