1 lb(450g) penne rigate
1/4 lb(110g)bacon, cut into narrow strips
1/2 cup(125ml) frozen peas
5oz(150g) uncooked peeled shrimp, cut into half if large
1 1/2 tbsp (20ml) butter
1/2 cup(125ml) cheese(ricotta prefered)
salt and black pepper
1tbsp(15ml) grated parmesan cheese
METHOD
cook penne in boiling salted water.
in a large pan saute bacon until the fat melts. Add the frozen peas and saute for 1 to 2 minutes before stirring in the shrimp. Cook, stirring, until just done. Add butter and lower the heat so that butter melts slowly..
In a bowl combine cheese, salt, pepper and parmesan. Just before serving, add 2 or 3 tbsp(30- 45ml) boiling pasta water and whisk in. Drain penne when al dente and toss it with the cheese. Then add bacon, shrimp and peas and toss once more before serving.
