1 1/3 lbs(600g)small zucchini, cut into sticks
1tbsp(75ml) unsalted butter
1/2 cup (125mL) vegetable oil
1tbsp(15ml) flour
1 cup(250ml) milk
125ml 1/2 cup cream
frsh basil

Sprinkle the zucchini with a little salt after wash and leave to drain.
heat a little butter and oil in a pan and fry the zucchini until brown but still crisp. Remove and set aside.
Melt rest of oil and butter in a saucepan. Add flour and cook, stirring until the paste is smooth and slighltly colored. Gradually add milk, stirring to break up any lumps. Cook until thickened and smooth.
Boil the pasta. Add cream to the white sauce and bring to a boil. When thickened remove from heat and stir in zucchini and basil. When pasta is al dente, drain and transfer to a warm serving dish. Pour the sauce over it and serve immediately.
