serves 4
2tbsp sunflower oil
4 slices crusty bread
2 tomatoes cut into rough chunks
1 medium onion, peeled and thinly sliced
8 olives sliced
few basil leaves or any other leaves
1x200g can tuna in olive oil, drained
1tbsp fresh parsley leaves, torn.

4 tbsp olive oil
juice of 1/2 a lemon
salt and black pepper.

place tomato chunks in a bowl with slices of onions, oilves and basil leaves. Break , drained tuna chunks and add to bowl with parsley. for the dressing , mix olive oil and lemon juice. season with salt and pepper. Pour over tomato mix and toss lightly. heap on to bread and serve.
