View Full Version : Bacon And Corn Pasta Salad With Mustard Dressing

500g pasta
1 tablespoon olive oil
250g button mushrooms, halved
4 bacon rashers, chopped coarsely
230g baby corn
1 medium(170g) red onion, chopped coarsely
1 large(320g)avocado, chopped coarsely
1 cup fresh flat- leaf parsley leaves
1 cup (250ml) salad dressing (any kind in the bottle)
1 tablespoon mustard

METHOD
cook the pasta in boiling water. Drain the pasta, then rinse it under cold water and set aside. Heat the oil in a pan, add the mushrooms and bacon and cook stirring, until begining to brown. Remove the mixture from the pan then add the corn and cook stirring, until browned all over.
Just before serving, combine the pasta, mushrooms, bacon, corn, onion , avocado and parsley in a large bowl. combine dressing and mustard in a jug. add to salad and toss gently.
