This can be made with pasta shells or other small shapes.
Cook 225g(8oz) pasta, rinse it under cold water and drain throughly. Turn into a bowl and add 25g 1(oz) chopped parsley, 4 tbsp chopped fresh mint, 2-3 chopped spring onions, 1 large tomato, peeled, seeded and diced and 1/4 green pepper, diced. Make the dressing with 4 tbsp each lemon juice and olive oil and seasoning to taste. Add to salad and toss. Cover and chill well. Serve garnished with lettuce leaves and tomato wedges.
