This recipe can be prepared several hours ahead. The lamb can be used while hot or allowed to cool.
8(650g) lamb fillets or 650g lamb eye or loin(backstrap)
1tablespoon olive oil
1 1/2 teaspoons dried oregano leaves
500g shell pasta( can use any type of pasta instead of the shell)
1 medium(170g) red onion
400g cherry tomatoes, halved
2(260g) cucumbers chopped coarsely
1 large(350g) green capsicum chopped coarsely
200g black olives
200g fetta cheese, sliced
Dressing
3/4 cup (180ml) olive oil
1/2 cup(125ml), lemon juice
1/2 teaspoon dried oregano leaves
Method:-
Combine the lamb, oil and one teaspoon of the oregano in a large bowl. Cook the lamb in an oiled non- stick pan until browned all over and cooked as desired. stand the lamb for five minutes before slicing. Meanwhile, cook the pasta in a large pot of boiling water, uncovered, until it is just tender. Drain the pasta, then rinse it under cold water.
Cut the onion lengthways into wedges. Just before serving, combine the sliced lamb with the pasta, onion, tomato, cucumber, capsicum, olives and dressing in a large bowl and toss gently. Top with fetta and sprinkle with remaining oregano.
Dressing:- combine all of the ingredients in a jar and shake well.
