View Full Version : Lightning prawns and pasta

275g/10oz pasta shells
100g/4oz defrosted frozen broad beans
75g/30z defrosted frozen peas
175g/60z best peeled prawns
2tbsp finely chopped and peeled onion
3 tomatoes, skinned, deseeded and diced
freshed parsely sprigs for garnish

For the dressing
Juice of half a lemon
4tbsp olive oil
1 tbsp mixed chopped
fresh herbs including parsley and chives
Salt and freshly ground black pepper

Method:-
Cook pasta shells in lightly salted boiling water until just al dente. Drain and refresh in cold water then drain again. Place in a large bowl.
Peel broad beans and add to pasta with peas, prawns, onions and tomato dice.
to make the dressing, mix lemon juice, olive oil, herbs and seasoning in a bowl. Pour over salad and toss.
Heap on to a platter and garnish with parsely to serve.

Preparation time: 15 minutes
cooking time approx 12 minutes

do we boil/grill/ fry/bake the prawns?

u boil the prawns. Either way u can fry them or boil them.
