View Full Version : Mozzarella & Tomato Omelette

Cook this colourful Italian style omelette for a light lunch. Sprinkle with grated Parmesan cheese and serve with green salad or crusty bread.

2 tablespoon olive oil
1 small onion, peeled and finely chopped
225g(8oz)tomatoes, seeded and chopped
1/2 yellow pepper,seeded and chopped
4 tablespoons semi- skimmed milk
4 eggs beated
1/4teaspoon salt
black pepper
75(3oz)mozzarella cheese,chopped
1tablespoon chopped fresh or 1 teaspoon dried basil

METHOD
Heat the oil in a frying pan. Add the onion and fry for 3 minutes or until softened.
Add the chopped tomatoes and yellow pepper. Cook for a further minute. Set aside a tablespoon of the mixture to garnish.
In a bowl , whisk together the milk and the beaten eggs. Season. Pour the mixture into to the frying pan and spread over the base of the pan. Cook for 3-4 minutes.
Preheat the grill to medium. Scatter the mozzarella cheese over the omelette and cook for a further 2 minutes, or until the omelette is lightly browned underneath.
Put the pan under the grill for 4minutes, or until the omeletteis golden.(if the frying pan handle is made of plastic, wrap it in foil before grilling) Sprinkle with basil and the reserved tomato mixture.Serve

Cook's tip:- Red pepper can be used instead of the tomatoes and yellow pepper . The omelette can also be eaten cold.
Slice into thin strips and serve with mixed salad leaves and slices of red pepper. Toss the salad in vinaigrette dressing before adding the omelette.
