mashed potatoes and tender cabbage are combined in this tasty , cheese - topped dish. It is very good with beef or chicken .
serves 6
900(g) potatoes peeled
i bunch spring onions
1 tablespoon vegetable oil
1 clove garlic, crushed,175g cabbage shredded
150ml chicken stock or veg stock
142ml sour cream
1/2 teaspoon salt
black pepper
2 tablespoon grated reduced fat chedder cheese.

method:-
chop the potatoes into pieces. Put the pan and cover with boiling water. cook for 7 minutes, or until tender. Drain and mash.
2)Finely slice the spring onions. Chop and set aside. In a large saucepan, heat the oil over a gentle heat add the garlic and spring onions. Fry for 3 minutes or until soft. Add the cabagge and stock. Cover for ten minutes, until the cabbage is tender.
3)in a large bowl, mix together the mashed potatoes, sour cream and seasoning. Stir in the cabbage mixture.
4)spoon the mxture into a large shallow casserole or gratin dish. Sprinkle with cheese . Bake for 20 minutes or until the top is golden. serve at once. PREHEAT THE OVEN TO 180 DEGREES/350F/GAS 4

PREPARATION TIME: 30 minutes
cooking time 20 minutes

potatoes are rich source of carbohydrate and are low in fat

cabbage contains some fibre and is high in vitamin C
